Bennigan's Cheese and Bacon Potato Skin Recipe

Everybody loves Cheese and Bacon Potato Skins,  And the ones you get at Bennigan's are some of the best and is really quite easy to make at home.  And you just know how popular these would be at a party.  Wow!  Our Bennigan's Recipe for their Cheese and Bacon Potato Skin tastes just like the real thing.

Bennigan's Cheese and Bacon Potato Skin Recipe

  • 5 large (about 2 pounds) Potatoes, scrubbed clean
  • 12 pieces Bacon, chopped
  • 6 Green Onions, sliced
  • 6 Tablespoons Butter, melted
  • 1 cup grated Cheddar Cheese
  • Sour Cream and Sweet Chilli Sauce for dipping

  1. Preheat oven to 350°F.
  2. Place potatoes onto middle shelf of oven. Bake for 45 minutes to 1 hour, or until tender. Cool.
  3. Heat a non-stick frying pan over medium heat.
  4. Cook bacon for 5 minutes.
  5. Remove from heat.
  6. Stir in half the onions.
  7. Preheat grill on medium-high heat.
  8. Cut potatoes into quarters, ensuring skin remains intact.
  9. Scoop out flesh, leaving a 1/2 inch layer of potato.
  10. Place skins onto a baking tray, flesh-side down.
  11. Brush with half the butter. Grill for 3 minutes, or until golden. Turn.
  12. Brush with remaining butter. Grill for a further 3 minutes, or until golden.
  13. Spoon bacon mixture into skins.
  14. Top with cheese and grill for a further 5 minutes - or until cheese is melted.
  15. Sprinkle with remaining onions.

Serve with sour cream and sweet chilli sauce.
